  • 1 lb breakfast sausage, cooked & crumbled
  • 1 cup shredded sharp cheddar cheese

Instructions

  • 1. Preheat oven to 400°F. Spray mini muffin tin generously with cooking spray.
  • 2. Cook sausage in skillet over medium-high, crumbling until browned and cooked through. Drain on paper towels.
  • 3. Whisk pancake mix and water in large bowl until just combined (lumps ok). Fold in cooked sausage, cheddar cheese, and maple syrup until evenly distributed.
  • 4. Fill mini muffin cups ¾ full with batter. Bake 12-15 minutes until golden brown and toothpick comes out clean.
  • 5. Cool in tin 5 minutes, then transfer to rack. Serve warm with extra maple syrup for dipping.
