  • 2 medium Japanese eggplants
  • 2 tbsp white miso paste
  • 1 tbsp mirin
  • 1 tbsp sake
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • 2 garlic cloves minced
  • 1 tsp grated ginger
  • 2 tbsp olive oil
  • Sesame seeds
  • Green onions sliced

Instructions

  • 1. Preheat air fryer to 375°F. Cut eggplants in half lengthwise, score diamond pattern on flesh.
  • 2. Mix miso, mirin, sake, honey, sesame oil, vinegar, garlic, and ginger into smooth paste.
  • 3. Brush eggplant flesh with olive oil. Air fry cut-side down 8 minutes.
  • 4. Flip, brush generously with miso glaze. Air fry 7-10 minutes until caramelized.
  • 5. Garnish with sesame seeds and green onions.

Notes

  • Score deeply but don’t cut through skin.
  • Japanese eggplants cook faster than globe variety.
  • Double glaze halfway through second cook for thick sauce.
