- 2 medium Japanese eggplants
- 2 tbsp white miso paste
- 1 tbsp mirin
- 1 tbsp sake
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tsp rice vinegar
- 2 garlic cloves minced
- 1 tsp grated ginger
- 2 tbsp olive oil
- Sesame seeds
- Green onions sliced
- 1. Preheat air fryer to 375°F. Cut eggplants in half lengthwise, score diamond pattern on flesh.
- 2. Mix miso, mirin, sake, honey, sesame oil, vinegar, garlic, and ginger into smooth paste.
- 3. Brush eggplant flesh with olive oil. Air fry cut-side down 8 minutes.
- 4. Flip, brush generously with miso glaze. Air fry 7-10 minutes until caramelized.
- 5. Garnish with sesame seeds and green onions.
Notes
- Score deeply but don’t cut through skin.
- Japanese eggplants cook faster than globe variety.
- Double glaze halfway through second cook for thick sauce.
