Mississippi Mud Pie Recipe

  • 24 Oreo cookies (whole, with filling)
  • 5 tbsp unsalted butter, melted
  • Brownie Layer:
  • ½ cup (1 stick) unsalted butter
  • 4 oz semi-sweet chocolate, chopped
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ⅓ cup all-purpose flour
  • 2 tbsp cocoa powder
  • ¼ tsp salt
  • Pudding Layer:
  • 1½ cups whole milk
  • 2 tbsp cornstarch
  • ¼ cup granulated sugar
  • Pinch salt
  • 6 oz semi-sweet chocolate, chopped
  • 1 tsp vanilla extract
  • Whipped Cream:
  • 1½ cups heavy whipping cream
  • 3 tbsp powdered sugar
  • Chocolate shavings for garnish

Instructions

  • 1. Preheat oven to 350°F. Crush Oreos into fine crumbs (food processor). Mix with melted butter. Press firmly into 9-inch springform pan bottom and up sides slightly. Bake 8-10 minutes. Cool completely.
  • 2. For brownie: Microwave butter and chocolate 30-second intervals until melted, stirring between. Whisk in sugar, then eggs and vanilla. Fold in flour, cocoa, salt. Spread evenly in cooled crust. Bake 20-25 minutes until just set (center may jiggle slightly). Cool completely.
  • 3. For pudding: Whisk milk, cornstarch, sugar, salt in saucepan over medium heat. Cook until thickened (3-5 minutes). Remove from heat, add chopped chocolate and vanilla. Stir until smooth. Pour over cooled brownie. Refrigerate 2 hours until set.
  • 4. For whipped cream: Beat heavy cream and powdered sugar to stiff peaks. Spread over pudding layer. Garnish with chocolate shavings. Chill 30 minutes before serving.

Notes

  • Springform pan easiest for clean slices; deep-dish pie plate works too.
  • Don’t overbake brownie slightly underdone stays fudgy.
  • Make components ahead: crust/brownie day 1, pudding day 2, whipped cream serving day.
  • Freeze whole pie up to 2 months; thaw overnight in fridge.
