- For the crust:
- 24 chocolate sandwich cookies (like Oreos), crushed
- 6 tbsp unsalted butter, melted
- For the filling:
- 1 cup granulated sugar
- 1/4 cup cocoa powder
- 1/4 cup cornstarch
- 1/4 tsp salt
- 3 cups whole milk
- 4 large egg yolks
- 6 oz semisweet chocolate, chopped
- 2 tbsp butter
- 1 tsp vanilla extract
- For the topping:
- 1 1/2 cups heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- Chocolate shavings for garnish
- 1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish.
- 2. In a bowl, mix crushed cookies with melted butter. Press firmly into the bottom and sides of the pie dish.
- 3. Bake crust for 10 minutes, then cool completely.
- 4. In a saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
- 5. Gradually whisk in milk until smooth. Cook over medium heat, stirring constantly until thickened, about 8–10 minutes.
- 6. Remove from heat and whisk in egg yolks one at a time.
- 7. Stir in chopped chocolate, butter, and vanilla until smooth and glossy.
- 8. Pour filling into cooled crust, smooth the top, and refrigerate at least 4 hours or until set.
