No Bake Samoa Cookies

Delightful no-bake cookies combining coconut, caramel, and chocolate.

Ingredients

  • 2 cups unsweetened shredded coconut
  • 1 cup soft caramel candies (about 20 pieces)
  • 2 tablespoons milk (or heavy cream)
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil (or butter)
  • ΒΌ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Toast the coconut over medium heat for 5 to 7 minutes until golden brown and fragrant.
  2. Melt the caramel candies with milk in a saucepan over low heat until smooth, then stir in vanilla and salt.
  3. Combine the toasted coconut with the melted caramel until fully coated.
  4. Shape the mixture into mounds on a parchment-lined baking sheet and flatten gently into cookies.
  5. Melt chocolate and coconut oil together in a microwave until smooth.
  6. Dip the bottom of each cookie into the melted chocolate and place back on parchment, then drizzle remaining chocolate on top.
  7. Set cookies in the refrigerator for 15 to 20 minutes until chocolate is firm.

Notes

Store in an airtight container at room temperature for up to 3 days or in the refrigerator for longer freshness. You can freeze for up to 2 months.
