  • 1 cup rolled oats
  • 1 cup milk
  • 1 1/4 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/3 cup vegetable oil (or melted butter)
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup chocolate chips

Instructions

  • 1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  • 2. In a bowl, soak oats in milk for 10 minutes to soften.
  • 3. In another bowl, whisk together flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
  • 4. Stir in the soaked oats, oil, egg, and vanilla until just combined.
  • 5. Fold in chocolate chips.
  • 6. Divide batter evenly into muffin cups.
  • 7. Bake for 18–20 minutes, until golden and a toothpick comes out clean.
  • 8. Cool slightly before serving.

Notes

  • For extra flavor, add a sprinkle of oats and chocolate chips on top before baking.
  • Swap chocolate chips with raisins or dried cranberries for a healthier twist.
  • Muffins store well in an airtight container for up to 3 days or can be frozen.
