- 1 cup rolled oats
- 1 cup milk
- 1 1/4 cups all-purpose flour
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/3 cup vegetable oil (or melted butter)
- 1 large egg
- 1 tsp vanilla extract
- 3/4 cup chocolate chips
- 1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- 2. In a bowl, soak oats in milk for 10 minutes to soften.
- 3. In another bowl, whisk together flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
- 4. Stir in the soaked oats, oil, egg, and vanilla until just combined.
- 5. Fold in chocolate chips.
- 6. Divide batter evenly into muffin cups.
- 7. Bake for 18–20 minutes, until golden and a toothpick comes out clean.
- 8. Cool slightly before serving.
Notes
- For extra flavor, add a sprinkle of oats and chocolate chips on top before baking.
- Swap chocolate chips with raisins or dried cranberries for a healthier twist.
