One-Pan Creamy Parmesan Chicken and Rice

A quick and delicious one-pan meal featuring tender chicken, creamy sauce, and rice that’s perfect for busy weeknights.

  • 2 chicken breasts
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Begin by taking a large skillet and placing it on medium heat. Add the tablespoon of olive oil to the pan. Give the oil a moment to heat up.
  2. While the oil is heating, season the chicken breasts with salt and pepper. Once the oil is hot, gently place the chicken in the skillet. Cook the chicken for about 5-7 minutes on each side, or until it is nicely browned and cooked through.
  3. After the chicken is cooked, add the minced garlic to the skillet. Sauté the garlic for about one minute, stirring constantly.
  4. Once the garlic is fragrant, stir in the rice and pour the chicken broth into the skillet. Bring this mixture to a boil over medium-high heat.
  5. Once boiling, reduce the heat to low and cover the skillet with a lid. Let it cook for approximately 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.
  6. After the rice is cooked, stir in the heavy cream and grated Parmesan cheese. Mix everything well, allowing the cheese to melt into the creamy sauce. Cook for an additional 5 minutes while stirring occasionally.
  7. Once your dish is creamy and well-mixed, turn off the heat. Garnish your One-Pan Creamy Parmesan Chicken and Rice with fresh parsley for an added touch of color and flavor.
