Ingredients

Scale
  • 1.5 lbs chicken breast cut into bite-sized pieces
  • 2 tbsp olive oil
  • 3 garlic cloves minced
  • 1/3 cup sun-dried tomatoes chopped
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • 3 cups chicken broth
  • 8 oz penne pasta
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese grated
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • 1. Season chicken with salt, pepper, and Italian seasoning. Heat oil in large skillet over medium-high.
  • 2. Cook chicken 5-6 minutes until golden. Remove and set aside.
  • 3. Sauté garlic 30 seconds. Add sun-dried tomatoes, red pepper flakes, broth. Bring to boil.
  • 4. Stir in uncooked pasta. Cover and simmer 12-15 minutes until pasta al dente, stirring occasionally.
  • 5. Reduce heat. Stir in cream, Parmesan, spinach, and chicken. Cook 2-3 minutes until spinach wilts and sauce thickens.
  • 6. Garnish with basil and extra Parmesan.

Notes

  • Don’t rinse pasta; starch thickens sauce.
  • Use oil-packed sun-dried tomatoes for best flavor.
  • Leftovers reheat well with splash of cream.
