One-Pan Sun-Dried Tomato Pasta

A creamy, flavor-packed one-pan pasta made with sun-dried tomatoes, garlic, and herbs an easy weeknight dinner that delivers bold Italian-inspired comfort with minimal cleanup.

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, sliced
  • 2 cups vegetable or chicken broth
  • 1 cup milk or heavy cream
  • 8 oz pasta (penne or rotini)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  • 1. Heat olive oil in a large skillet over medium heat.
  • 2. Add garlic and sun-dried tomatoes; sauté until fragrant.
  • 3. Pour in broth and milk and bring to a gentle simmer.
  • 4. Stir in pasta, salt, pepper, Italian seasoning, and red pepper flakes.
  • 5. Cover and cook for 10–12 minutes, stirring occasionally, until pasta is tender.
  • 6. Uncover and stir in Parmesan cheese until sauce is creamy.
  • 7. Adjust seasoning as needed.
  • 8. Garnish with fresh herbs and serve warm.

Notes

  • Add spinach or kale during the last few minutes for extra greens.
  • Swap cream for milk for a lighter version.
  • Leftovers reheat well with a splash of broth or milk.
