One Pot Smoked Sausage and Rice

A delightful one-pot meal combining smoked sausage, rice, and vegetables for a hearty, family-friendly dish that’s easy to prepare.

  • 1 pound smoked sausage, sliced
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 can diced tomatoes (14.5 ounces)
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup frozen peas

Instructions

  1. Sauté the sausage: In a large pot, heat your stovetop to medium heat. Add the sliced smoked sausage and cook for about 5-7 minutes until it is browned.
  2. Cook the vegetables: Once the sausage is browned, add the chopped onion, bell pepper, and minced garlic to the pot. Stir and cook for another 3-4 minutes.
  3. Add rice and spices: Stir in the long-grain rice, paprika, salt, and pepper. Make sure to mix well.
  4. Mix in liquids: Pour in the chicken broth and diced tomatoes. Stir to combine and bring to a boil.
  5. Simmer the dish: Reduce the heat to low, cover the pot, and let it simmer for about 20 minutes.
  6. Add peas and serve: After 20 minutes, remove the lid and stir in the frozen peas. Heat through for another 3-4 minutes.
