  • 1 large head green cabbage (23 lbs)
  • ¼ cup olive oil
  • 6 garlic cloves (minced or pressed)
  • 1½ tsp kosher salt
  • ½ tsp black pepper
  • Optional: ½ tsp smoked paprika or red pepper flakes

Instructions

  • 1. Preheat oven to 400°F (200°C). Line large baking sheet with parchment paper or silicone mat.
  • 2. Remove loose outer cabbage leaves. Place core-side down on cutting board. Slice into 1-inch thick steaks/wedges (3-4 total), keeping core intact to hold layers together.
  • 3. Whisk olive oil, minced garlic, salt, pepper, and optional paprika. Brush generously on both sides and all edges of each steak.
  • 4. Arrange steaks in single layer on baking sheet. Roast 25 minutes until edges brown and caramelize.
  • 5. Carefully flip using wide spatula. Roast additional 15-20 minutes until tender inside but crispy edges. Cabbage is done when knife pierces center easily.

Notes

  • Keep core intact or steaks fall apart; aim for 1-inch thickness.
  • Fresh garlic makes biggest flavor difference—don’t substitute powder.
  • High heat + constant sheet pan contact creates crispy caramelized edges.
  • Room temperature olive oil brushes easier than cold oil.
