- ¼ cup olive oil
- 6 garlic cloves (minced or pressed)
- 1½ tsp kosher salt
- ½ tsp black pepper
- Optional: ½ tsp smoked paprika or red pepper flakes
- 1. Preheat oven to 400°F (200°C). Line large baking sheet with parchment paper or silicone mat.
- 2. Remove loose outer cabbage leaves. Place core-side down on cutting board. Slice into 1-inch thick steaks/wedges (3-4 total), keeping core intact to hold layers together.
- 3. Whisk olive oil, minced garlic, salt, pepper, and optional paprika. Brush generously on both sides and all edges of each steak.
- 4. Arrange steaks in single layer on baking sheet. Roast 25 minutes until edges brown and caramelize.
- 5. Carefully flip using wide spatula. Roast additional 15-20 minutes until tender inside but crispy edges. Cabbage is done when knife pierces center easily.
