Overnight Baked Banana French Toast Casserole

A delightful breakfast dish that can be prepared the night before, combining bananas, cinnamon, and baked bread for a stress-free morning meal.

  • 1 lb loaf Sourdough or French Bread, cut into chunks
  • 8 large eggs
  • 2 cups (480ml) milk (whole or 2%)
  • 1/2 cup (120ml) heavy whipping cream
  • 1/2 cup (104g) sugar
  • 1/4 cup (36g) light brown sugar, unpacked
  • 2 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • 67 medium sized bananas, chopped
  • 3/4 cup (98g) all-purpose flour
  • 3/4 cup (169g) firmly packed brown sugar
  • 1 tsp cinnamon
  • 1/2 cup (112g) salted butter, cut into pieces

Instructions

  1. Prepare Your Dish: Start by greasing a 9×13 inch casserole dish.
  2. Add Bread Chunks: In a large bowl, add the chunks of bread.
  3. Combine Wet Ingredients: In another bowl, crack the eggs and whisk them together. Then add the milk, cream, both sugars, vanilla extract, and cinnamon.
  4. Pour Over Bread: Take the egg mixture and pour it over the bread chunks.
  5. Add Bananas: Chop the bananas and add them to the bread mixture.
  6. Transfer to Casserole Dish: Once everything is well combined, pour the entire mixture into the greased casserole dish.
  7. Cover and Refrigerate: Cover the dish tightly with plastic wrap and place it in the fridge overnight.
  8. Preheat the Oven: When ready to bake, preheat your oven to 350°F (176°C).
  9. Bake the Casserole: Bake for about 35-40 minutes.
  10. Prepare the Streusel: While baking, combine flour, brown sugar, and cinnamon for the streusel, then add butter and mix until crumbly.
  11. Add the Streusel: Sprinkle the streusel over the casserole.
  12. Finish Baking: Return to the oven for about 5 minutes.
  13. Serve: Allow it to cool slightly before cutting into squares and serving with syrup and toppings.

Notes

For best results, use stale bread and ripe bananas. Customize with nuts, chocolate chips, or other fruits as desired.
