  • 8 frozen or homemade pancakes
  • 1 lb breakfast sausage, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 6 large eggs
  • 1 1/2 cups milk
  • 1/4 cup maple syrup
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Butter or oil for greasing

Instructions

  • 1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • 2. Arrange pancakes in the bottom of the dish, slightly overlapping.
  • 3. Top with cooked sausage and sprinkle with shredded cheddar.
  • 4. In a bowl, whisk together eggs, milk, maple syrup, cinnamon, salt, and pepper.
  • 5. Pour the egg mixture evenly over the casserole.
  • 6. Cover with foil and bake for 30 minutes.
  • 7. Remove foil and bake an additional 10–15 minutes, until set and golden.
  • 8. Let rest 5 minutes before slicing and serving warm.
