Ingredients

  • 4 cups chopped kale, stems removed
  • 2 ripe peaches, sliced
  • 1 cup fresh blueberries
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • For the dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  • 1. In a large bowl, massage kale with a pinch of salt until tender.
  • 2. Add peaches, blueberries, almonds, red onion, and feta cheese.
  • 3. In a small bowl, whisk olive oil, lemon juice, honey, salt, and pepper.
  • 4. Pour dressing over salad and toss gently to combine.
  • 5. Serve immediately or chill for up to 1 hour.
