⅓ cup vegetable oil,
1 large egg,

1½ cups diced fresh peaches,
⅓ cup all-purpose flour (for topping),
⅓ cup brown sugar, packed,
3 tablespoons cold butter, cubed,
½ teaspoon ground cinnamon (for topping),

Instructions
Preheat oven to 375°F. Line 12-cup muffin tin with paper liners. Dice peaches and toss with 1 tablespoon flour.
Combine flour, brown sugar, cinnamon, and salt. Cut in cold butter until mixture resembles coarse crumbs.
Whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg in large bowl.
In separate bowl, whisk oil, egg, buttermilk, and vanilla until smooth.
Pour wet ingredients into dry ingredients and stir until just combined. Gently fold in floured peaches.
Divide batter among muffin cups, filling ¾ full. Top with streusel. Bake 20-25 minutes until golden brown and toothpick comes out with few moist crumbs.
Cool in pan 5 minutes before transferring to wire rack.
