  • 1 large egg,
  • 1 cup buttermilk,
  • 1 teaspoon vanilla extract,
  • 1½ cups diced fresh peaches,
  • ⅓ cup all-purpose flour (for topping),
  • ⅓ cup brown sugar, packed,
  • 3 tablespoons cold butter, cubed,
  • ½ teaspoon ground cinnamon (for topping),
  • Pinch of salt (for topping)

Instructions

  • Preheat oven to 375°F. Line 12-cup muffin tin with paper liners. Dice peaches and toss with 1 tablespoon flour.
  • Combine flour, brown sugar, cinnamon, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  • Whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg in large bowl.
  • In separate bowl, whisk oil, egg, buttermilk, and vanilla until smooth.
  • Pour wet ingredients into dry ingredients and stir until just combined. Gently fold in floured peaches.
  • Divide batter among muffin cups, filling ¾ full. Top with streusel. Bake 20-25 minutes until golden brown and toothpick comes out with few moist crumbs.
  • Cool in pan 5 minutes before transferring to wire rack.
