Ingredients

  •    6–8 ripe peaches, peeled and sliced,
  •     1/2 cup sugar,
  •     1 tsp cinnamon,
  •     1 tbsp lemon juice,
  •     1 tbsp cornstarch,
  •     1 cup all-purpose flour,
  •     1/2 cup sugar,
  •     1 tsp baking powder,
  •     1/4 tsp salt,
  •     1/2 cup butter, melted,
  •     1/2 cup milk

Instructions

  • Prepare the Peaches
    Add the sliced peaches, sugar, and a pinch of salt to a saucepan. Stir to combine. (If using canned peaches, skip this step and move to Step 3.)
    Cook over medium heat for 2–3 minutes, just until the sugar dissolves and the peaches release their juices. Remove from heat and set aside.
  • Melt the Butter
    Preheat your oven to 350°F (175°C). Slice butter into pieces and place them in a 9×13-inch baking dish. Put the dish in the oven while it preheats, letting the butter melt completely. Once melted, carefully remove the pan from the oven.
  • Make the Batter
    In a large bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the milk just until combined — don’t overmix.
    Pour the batter evenly over the melted butter in the pan and gently smooth it out.
  • Assemble the Cobbler
    Spoon the peaches and their juices (or canned peaches, if using) evenly over the batter. Sprinkle ground cinnamon generously over the top.
  • Bake and Serve
    Bake at 350°F for about 38–40 minutes, until the top is golden and set.
    Serve warm with a scoop of vanilla ice cream if desired — and enjoy!
