Peach & Strawberry Crisp Recipe

Peach & Strawberry Crisp features juicy ripe summer peaches and strawberries bubbling under buttery cinnamon oat crumble topping. Perfect warm-from-oven dessert showcasing peak-season fruit with golden crunchy topping and optional vanilla ice cream pairing.

Ingredients

Scale
  • Filling:
  • 6 medium peaches, peeled and sliced (5 cups)
  • 3 cups fresh strawberries, hulled and halved
  • ½ cup granulated sugar
  • 3 tbsp cornstarch
  • 2 tbsp fresh lemon juice
  • 1 tsp vanilla extract
  •
  • Crumble Topping:
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ¾ cup packed brown sugar
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ cup cold unsalted butter, cubed
  • ½ cup chopped pecans (optional)

Instructions

  • 1. Preheat oven to 375°F. Butter 9×13 baking dish. Gently toss peaches, strawberries, sugar, cornstarch, lemon juice, and vanilla. Spread evenly in dish.
  • 2. Combine oats, flour, brown sugar, cinnamon, and salt. Cut in cold butter with pastry blender or fingers until crumbly pea-sized pieces form. Stir in pecans if using.
  • 3. Sprinkle crumble evenly over fruit, squeezing handfuls to create larger clumps. Bake 35-45 minutes until fruit bubbles thickly and topping is deep golden. Rotate halfway through baking.
  • 4. Cool 20 minutes before serving warm. Serve with vanilla ice cream or whipped cream.

Notes

  • Peel peaches by blanching in boiling water 30 seconds, then ice bath for easy skins.
  • Cornstarch essential for thick shiny fruit filling; flour makes cloudy sauce.
  • Cold butter creates flaky crumble texture; softened makes cake-like topping.
  • Frozen fruit works; don’t thaw before tossing to prevent mush.
  • Excellent make-ahead; assemble and refrigerate up to 24 hours before baking.
