- ½ cup (1 stick) unsalted butter, softened
- 1 cup creamy peanut butter
- ¾ cup packed light brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1½ tsp vanilla extract
- 1½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ½ cup strawberry jam or jelly (chilled)
- Sugar coating:
- ¼ cup granulated sugar
- 1. Preheat oven to 350°F. Line two baking sheets with parchment paper.
- 2. In a large bowl, beat butter, peanut butter, brown sugar, and ¼ cup granulated sugar until creamy (2-3 minutes). Add egg and vanilla; beat until combined.
- 3. In a separate bowl, whisk flour, baking soda, and salt. Gradually add dry ingredients to wet mixture, mixing until just combined. Do not overmix.
- 4. Scoop 1½ tablespoon dough balls (about 38g each). Roll in granulated sugar coating. Place 2 inches apart on baking sheets. Gently press thumb (or end of wooden spoon) into center of each ball to create ½-inch indentation.
- 5. Bake 10-12 minutes until edges are set but centers still soft. Cookies will firm as they cool. Immediately re-press indentations if needed. Cool 5 minutes on pan, then transfer to wire rack.
- 6. Once completely cool, fill indentations with 1 tsp chilled strawberry jam per cookie.
Notes
- Chill jam before filling prevents melting during storage.
- Natural peanut butter works; stir well before measuring.
- For uniform cookies, use #40 cookie scoop (1½ tbsp).
- Grape jelly, raspberry, or apricot jam all delicious alternatives.
- Store in airtight container up to 5 days; freeze up to 3 months.
