Pepper Steak with Bell Peppers and Onion

  • 1 lb flank steak, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp freshly ground black pepper
  • 1/2 cup beef broth
  • 1 tbsp oyster sauce
  • 1 tsp sugar

Instructions

  • 1. In a bowl, toss sliced steak with soy sauce and cornstarch; set aside for 10 minutes.
  • 2. Heat 1 tablespoon oil in a large skillet or wok over high heat.
  • 3. Add beef and sear quickly until just browned; remove and set aside.
  • 4. Add remaining oil to the skillet and sauté bell peppers and onion until crisp-tender.
  • 5. Add garlic and black pepper; cook until fragrant.
  • 6. Return beef to the skillet and stir to combine.
  • 7. Pour in beef broth, oyster sauce, and sugar.
  • 8. Cook for 2–3 minutes until sauce thickens and coats the beef.
  • 9. Remove from heat and serve hot.

Notes

  • Slice beef against the grain for maximum tenderness.
  • Adjust black pepper to taste for more or less heat.
  • Serve over steamed rice or noodles for a complete meal.
