  • 2 flatbreads (store-bought or homemade)
  • 1 cup cooked chicken breast, shredded or cubed
  • 1/3 cup pesto sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup cherry tomatoes, halved
  • 2 tbsp red onion, thinly sliced
  • Fresh basil leaves, for garnish
  • Olive oil, for brushing
  • Salt and pepper, to taste

Instructions

  • 1. Preheat oven to 400°F (200°C).
  • 2. Place flatbreads on a baking sheet and lightly brush with olive oil.
  • 3. Spread pesto evenly over each flatbread.
  • 4. Top with cooked chicken, mozzarella cheese, cherry tomatoes, and red onion.
  • 5. Season with a pinch of salt and pepper.
  • 6. Bake for 8–10 minutes, until cheese is melted and edges are golden.
  • 7. Remove from oven, garnish with fresh basil, slice, and serve warm.
