Pineapple Chicken and Rice

A delightful one-pan meal that combines the sweetness of pineapple with tender chicken and fluffy rice, perfect for busy weeknights.

  • 1 lb chicken breast, cubed
  • 1 cup pineapple chunks
  • 1 cup rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pan, heat olive oil over medium heat.
  2. Add the onions and garlic, sauté until softened.
  3. Add the cubed chicken and cook until lightly browned.
  4. Stir in the bell pepper and pineapple, cooking for a few minutes.
  5. Add the rice, chicken broth, and soy sauce.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and liquid is absorbed.
  7. Season with salt and pepper to taste before serving.

Notes

For added flavor, marinate the chicken in soy sauce for 30 minutes before cooking. Use brown rice for a healthier option, but adjust cooking time accordingly. Feel free to add other vegetables like peas or carrots.
