Pineapple Chicken Tacos

Delicious tacos combining grilled chicken and caramelized pineapple for a tropical twist.

Ingredients

  • 2 chicken breasts
  • 1 fresh pineapple, diced
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Corn tortillas
  • Fresh cilantro for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Combine diced chicken, olive oil, lime juice, salt, and pepper in a bowl to marinate.
  3. Let the chicken marinate for about 15 minutes.
  4. Grill the marinated chicken breasts for about 6-7 minutes on each side.
  5. Remove the chicken from the grill and let it rest for about 5 minutes.
  6. Grill the diced pineapple, red onion, and bell pepper for 3-4 minutes.
  7. Warm the corn tortillas for about 30 seconds on each side.
  8. Slice the grilled chicken and place it on the warm tortillas.
  9. Top with grilled pineapple and vegetables.
  10. Garnish with fresh cilantro and serve immediately.

Notes

For an extra kick, add spices to your marinade like chili powder or smoked paprika.
