  • 1 cup granulated sugar
  • 1 large egg
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup pink lemonade mix (powdered)
  • 1 cup powdered sugar
  • 12 tbsp lemon juice
  • Pink food coloring (optional)

Instructions

  • 1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • 2. In a bowl, cream butter and sugar until light and fluffy.
  • 3. Beat in egg, lemon zest, and lemon juice until combined.
  • 4. In another bowl, whisk together flour, baking powder, salt, and pink lemonade mix.
  • 5. Gradually add dry ingredients to wet ingredients until a soft dough forms.
  • 6. Scoop dough onto prepared baking sheet, spacing evenly.
  • 7. Bake for 10–12 minutes until edges are set.
  • 8. Allow cookies to cool completely.
  • 9. Whisk powdered sugar and lemon juice to make a glaze; add food coloring if desired.
  • 10. Drizzle glaze over cooled cookies and let set before serving.

Notes

  • For extra color, add a drop of pink food coloring to the dough.
  • Do not overbake to keep cookies soft.
  • Store in an airtight container at room temperature for up to 4 days.
