- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 box (3.4 oz) instant pistachio pudding mix
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup white chocolate chips
- 1/2 cup chopped pistachios
- Green food coloring (optional)
- 1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- 2. Cream butter, granulated sugar, and brown sugar until light and fluffy.
- 3. Add eggs and vanilla; beat until combined.
- 4. Mix in pudding mix, flour, baking soda, and salt until just combined.
- 5. Fold in white chocolate chips, chopped pistachios, and green food coloring if using.
- 6. Scoop tablespoon-sized dough balls onto baking sheets, 2 inches apart.
- 7. Bake 9-11 minutes until edges are set. Cool on sheet 5 minutes, then transfer to wire rack.
