Ingredients

  • 3 large leeks, white and light green parts only, sliced
  • 2 tbsp unsalted butter
  • 4 cups peeled and diced potatoes (Yukon Gold or Russet)
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh chives or thyme for garnish

Instructions

  • 1. Clean leeks thoroughly and slice.
  • 2. Melt butter in a large pot over medium heat.
  • 3. Add leeks and sauté until soft, about 5-7 minutes.
  • 4. Add diced potatoes and broth; bring to a boil.
  • 5. Reduce heat and simmer until potatoes are tender, about 20 minutes.
  • 6. Use an immersion blender to puree soup until smooth.
  • 7. Stir in heavy cream and season with salt and pepper.
  • 8. Garnish with fresh chives or thyme and serve warm.
