Potato Mochi

A delightful treat combining fluffy potatoes with gooey melted cheese, perfect as a snack, appetizer, or side dish.

Ingredients

  • 500g large potatoes, chopped and peeled
  • 4 tablespoons potato starch
  • 1/4 teaspoon salt
  • Cheese of choice (mozzarella recommended)
  • 2 tablespoons soy sauce
  • 4 tablespoons water
  • 2 tablespoons brown sugar
  • 20g unsalted butter

Instructions

  1. Prepare the potatoes by filling a pot with water and adding a pinch of salt. Bring to a boil.
  2. Boil the potatoes until fork-tender, about 15-20 minutes.
  3. Drain and transfer potatoes to a bowl, then mash until smooth.
  4. Combine potato starch and salt with mashed potatoes and mix until a smooth dough forms.
  5. Divide the mixture into 6-8 equal pieces.
  6. Shape each piece, placing cheese in the center and wrapping the dough around it.
  7. Cook in a pan with heated oil for 3-4 minutes on each side until golden brown.
  8. Prepare the sauce by mixing soy sauce, water, brown sugar, and unsalted butter in a bowl.

Notes

Can serve with dipping sauces like soy sauce or spicy mayonnaise. Store leftovers in an airtight container for up to 3 days or freeze uncooked for up to 2 months.
