1 cup plain Greek yogurt, room temperature,
1 scoop vanilla protein powder (25-30g),
¼ cup natural almond butter,
3 tablespoons pure maple syrup,
1 large egg,
1 cup oat flour,
½ teaspoon baking soda,
½ teaspoon vanilla extract,
¼ teaspoon sea salt,
⅓ cup dark chocolate chips (optional)
Instructions
Preheat oven to 350°F. Line baking sheet with parchment paper. Bring Greek yogurt to room temperature for 30 minutes.
In large bowl, whisk Greek yogurt until smooth. Add almond butter, maple syrup, egg, and vanilla extract. Mix until completely combined.
In separate bowl, whisk together protein powder, oat flour, baking soda, and salt. Gradually fold dry ingredients into wet mixture just until incorporated.
Fold in chocolate chips if using. Let dough rest for 10 minutes to allow flour to hydrate.
Scoop dough onto prepared baking sheet, spacing 2 inches apart. Gently flatten to ½-inch thickness. Bake 12-15 minutes until edges are lightly golden.
Cool on baking sheet for 5 minutes, then transfer to wire rack. Store in airtight container up to 5 days at room temperature.
