  • 1 cup plain Greek yogurt, room temperature,
  • 1 scoop vanilla protein powder (25-30g),
  • ¼ cup natural almond butter,
  • 3 tablespoons pure maple syrup,
  • 1 large egg,
  • 1 cup oat flour,
  • ½ teaspoon baking soda,
  • ½ teaspoon vanilla extract,
  • ¼ teaspoon sea salt,
  • ⅓ cup dark chocolate chips (optional)

Instructions

  • Preheat oven to 350°F. Line baking sheet with parchment paper. Bring Greek yogurt to room temperature for 30 minutes.
  • In large bowl, whisk Greek yogurt until smooth. Add almond butter, maple syrup, egg, and vanilla extract. Mix until completely combined.
  • In separate bowl, whisk together protein powder, oat flour, baking soda, and salt. Gradually fold dry ingredients into wet mixture just until incorporated.
  • Fold in chocolate chips if using. Let dough rest for 10 minutes to allow flour to hydrate.
  • Scoop dough onto prepared baking sheet, spacing 2 inches apart. Gently flatten to ½-inch thickness. Bake 12-15 minutes until edges are lightly golden.
  • Cool on baking sheet for 5 minutes, then transfer to wire rack. Store in airtight container up to 5 days at room temperature.
