Soft, chewy, and full of warm fall flavor these Pumpkin Chocolate Chip Cookie Bars combine pumpkin spice sweetness with gooey chocolate chips in every bite.

  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 cup semisweet chocolate chips

Instructions

  • 1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  • 2. In a large bowl, whisk together pumpkin purée, melted butter, sugars, egg, and vanilla until smooth.
  • 3. In another bowl, combine flour, baking soda, baking powder, pumpkin pie spice, and salt.
  • 4. Gradually add dry ingredients to the wet mixture and stir until just combined.
  • 5. Fold in chocolate chips.
  • 6. Spread batter evenly into prepared pan.
  • 7. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  • 8. Cool completely before cutting into bars.

Notes

  • For extra flavor, sprinkle sea salt over the top before baking.
  • Use dark chocolate chips for a richer flavor.
  • Store bars in an airtight container for up to 5 days or freeze for up to 2 months.
