  • 8 oz feta cheese, drained,
  • 4 oz cream cheese, softened,
  • 2 tablespoons olive oil,
  • 2 tablespoons honey,
  • 1 teaspoon ground cinnamon,
  • ½ teaspoon ground nutmeg,
  • ¼ teaspoon ground ginger,
  • ¼ teaspoon smoked paprika,
  • 2 cloves garlic, minced,
  • 2 tablespoons fresh lemon juice,
  • Salt and pepper to taste,
  • 2 tablespoons fresh thyme leaves

Instructions

  • Bring cream cheese to room temperature. Drain feta thoroughly and pat dry.
  • In a food processor, blend cream cheese and feta until completely smooth, about 2 minutes.
  • Add pumpkin puree, olive oil, and honey. Process until well combined and smooth.
  • Add cinnamon, nutmeg, ginger, paprika, garlic, and lemon juice. Pulse until evenly distributed.
  • Season with salt and pepper to taste. Transfer to serving bowl.
  • Refrigerate for at least 30 minutes to allow flavors to meld. Garnish with fresh thyme before serving.
