Instructions

  1. Prepare the Potatoes: Start by boiling the diced potatoes in salted water until tender, about 10-15 minutes. Drain and set aside.
  2. Cook the Onions and Garlic: Heat a little oil in a skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is softened and translucent.
  3. Brown the Beef: Add the ground beef, cooking until browned, about 5-7 minutes. Season with cumin, salt, and pepper.
  4. Combine with Potatoes: Mix the boiled potatoes into the skillet and let cook for another 2-3 minutes.
  5. Warm the Tortillas: Warm the corn tortillas in a skillet or microwave until pliable.
  6. Fill the Tortillas: Fill each tortilla with the beef and potato mixture and fold them in half.
  7. Fry the Tacos: Heat oil in a deep pan and fry the tacos until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
  8. Serve Hot: Serve the tacos with toppings like lettuce, salsa, cheese, and avocado.

Notes

For a vegetarian option, replace ground beef with black beans or lentils. Store leftovers in an airtight container in the refrigerator for up to 3 days.
