Quick Low FODMAP Tuscan Soup

A hearty yet uncomplicated soup packed with flavor and nutritious ingredients, perfect for busy weeknights.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage (or a low FODMAP alternative)
  • 1 medium potato, diced
  • 4 cups low-sodium chicken broth
  • 1 cup kale, chopped
  • 1 cup coconut milk
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the Italian sausage and cook until browned.
  3. Stir in the diced potato and chicken broth, and bring to a boil.
  4. Reduce the heat and simmer until the potatoes are tender, about 10 minutes.
  5. Add the kale and coconut milk, then season with red pepper flakes, salt, and pepper.
  6. Simmer for an additional 5 minutes before serving.

Notes
