Scalloped Potatoes

Creamy, cheesy scalloped potatoes that are a perfect comfort food for any occasion.

  • 2 lbs Yukon gold potatoes
  • 1 medium white or yellow onion
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups unsweetened almond milk
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 cup shredded Gruyere cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the Yukon gold potatoes and onions thinly.
  3. Melt butter in a saucepan over medium heat.
  4. Create a roux by adding flour slowly and stirring constantly.
  5. Whisk in the almond milk and continue cooking until thickened.
  6. Season the sauce with garlic powder, salt, and pepper.
  7. Layer half of the sliced potatoes and onions in a greased baking dish.
  8. Pour half the sauce over the potatoes and onions.
  9. Add a layer of cheddar and Gruyere cheese.
  10. Repeat the layering with the remaining potatoes, onions, and sauce.
  11. Top with Parmesan cheese.
  12. Cover the dish with foil and bake for 40 minutes.
  13. Uncover and bake again for 20-30 minutes until golden and bubbly.
  14. Garnish with parsley before serving.

Notes

For an extra creamy sauce, consider adding cream cheese or sour cream. You can also experiment with different cheeses to customize the flavor.
