Sunshine Salad

A light and refreshing fruit salad combined with sugar-free Jello, perfect for summer gatherings.

  • 1 package sugar-free Jello (any flavor)
  • 2 cups boiling water
  • 2 cups cold water
  • 2 cups assorted fresh fruit (e.g., strawberries, blueberries, mandarin oranges, and pineapple)
  • 2 cups whipped topping (optional for serving)

Instructions

  1. Dissolve the Jello: Start by boiling 2 cups of water in a kettle or pot. Once boiling, take it off the heat and pour it into a large mixing bowl. Open the package of sugar-free Jello and pour it into the bowl with the boiling water. Stir the mixture thoroughly with a whisk or spoon until the Jello powder is fully dissolved.
  2. Add cold water: After the Jello is dissolved, add another 2 cups of cold water to the mixture. Stir it again to ensure everything is well combined.
  3. Chill: Place the bowl in the refrigerator and let it chill for about 30 minutes.
  4. Fold in fruit: After 30 minutes, gently fold in the assorted fresh fruit into the Jello mixture.
  5. Transfer and set: Pour the mixture into a serving dish and return to the refrigerator to set completely for about 2-3 hours.
  6. Serve: Add whipped topping to each serving if desired.

Notes

Store in an airtight container in the refrigerator and consume within 3-5 days.
