Instructions

  • 1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • 2. Beat butter and powdered sugar until creamy.
  • 3. Mix in vanilla extract.
  • 4. In another bowl, whisk flour, almond flour, and salt.
  • 5. Gradually add dry ingredients to the butter mixture.
  • 6. Shape dough into 1-inch balls and place on baking sheets.
  • 7. Bake for 12-15 minutes until edges are lightly golden.
  • 8. Cool slightly, then flatten each cookie and place 1 tsp raspberry jam in center.
  • 9. Top with another cookie half and press edges to seal.
  • 10. Roll finished cookies in powdered sugar.
