Roasted Herb and Honey Sweet Potatoes

Tender roasted sweet potatoes caramelized with honey and infused with fresh herbs a perfect blend of sweet and savory for any meal or holiday table.

Ingredients

  • 3 large sweet potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • 1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • 2. In a large bowl, toss sweet potatoes with olive oil, honey, thyme, rosemary, garlic powder, salt, and pepper.
  • 3. Spread evenly on the prepared baking sheet in a single layer.
  • 4. Roast for 25–30 minutes, flipping halfway through, until golden and caramelized.
  • 5. Remove from oven and garnish with fresh parsley before serving.

Notes

  • For extra crispiness, roast an additional 5 minutes.
  • You can drizzle extra honey before serving for more sweetness.
  • Pairs perfectly with roasted chicken or grilled salmon.
