  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/2 cup crumbled feta cheese
  • 2 tbsp honey (or more, to taste)
  • 1 tbsp fresh thyme or rosemary, chopped
  • Optional: crushed red pepper flakes for heat

Instructions

  • 1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • 2. Toss sweet potato rounds with olive oil, salt, and pepper.
  • 3. Arrange in a single layer and roast for 25–30 minutes, flipping halfway, until golden and tender.
  • 4. Remove from oven and let cool slightly.
  • 5. Top each round with crumbled feta and a drizzle of honey.
  • 6. Sprinkle with fresh herbs and optional red pepper flakes before serving.

Notes

  • For extra flavor, drizzle with balsamic glaze instead of honey.
