Scale
  • 4 bone-in chicken thighs
  • 2 tbsp olive oil
  • 1 onion, thinly sliced
  • 3 garlic cloves, minced

  • 1/2 cup chicken broth
  • 2 tbsp Dijon mustard
  • 2 sprigs fresh rosemary
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions

  • 1. Pat chicken dry and season with salt and pepper.
  • 2. Heat olive oil in a skillet over medium-high heat and sear chicken until golden on both sides. Remove and set aside.
  • 3. Add onion and garlic to the pan, sauté until softened.
  • 4. Pour in apple cider and broth, scraping up any browned bits.
  • 5. Whisk in Dijon mustard and apple cider vinegar.
  • 6. Return chicken to the pan, nestle rosemary sprigs into the liquid.
  • 7. Reduce heat, cover, and simmer for 25–30 minutes until chicken is cooked through.
  • 8. Remove rosemary sprigs, adjust seasoning, and serve warm.

Notes

  • Pairs well with mashed potatoes, rice, or roasted vegetables.
  • You can use boneless chicken breasts instead—reduce cooking time.
  • Add a splash of cream at the end for a richer sauce.
