  • 1 cup finely grated Parmesan cheese
  • 1 tbsp fresh rosemary, finely chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 12 tbsp cold water (as needed)
  • Flaky sea salt, for topping

Instructions

  • 1. In a bowl, whisk flour, Parmesan, rosemary, salt, pepper, and garlic powder.
  • 2. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  • 3. Add egg yolk and mix until dough starts to come together.
  • 4. Add cold water 1 tablespoon at a time just until dough forms.
  • 5. Shape dough into a disk, wrap, and refrigerate for 30 minutes.
  • 6. Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  • 7. Roll dough to 1/8-inch thickness and cut into snowflake shapes.
  • 8. Place cookies on baking sheet and sprinkle lightly with flaky salt.
  • 9. Bake 12–15 minutes until edges are lightly golden.
  • 10. Cool on a wire rack before serving.

  • Dough can be made ahead and frozen for up to 1 month.
