Salt and Vinegar Fingerling Potatoes

Crispy Salt and Vinegar Fingerling Potatoes roasted until golden with a tangy vinegar soak and generous sea salt finish. Addictive snack or side dish with chip-like crunch and bold flavor.

Ingredients

  • 2 lbs fingerling potatoes
  • 1/4 cup white vinegar (or malt vinegar)
  • 3 tablespoons olive oil
  • 2 teaspoons sea salt flakes
  • 1 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary or thyme (optional)
  • Extra sea salt for finishing

Instructions

  • 1. Preheat oven to 425°F (220°C). Line baking sheet with parchment paper.
  • 2. Cut fingerling potatoes in half lengthwise. Place in bowl and toss with vinegar. Let sit 15 minutes.
  • 3. Drain potatoes, pat dry thoroughly with paper towels.
  • 4. Toss with olive oil, sea salt, pepper, garlic, and herbs.
  • 5. Arrange cut-side down on baking sheet in single layer.
  • 6. Roast 30-35 minutes until crispy and golden. Sprinkle with extra sea salt while hot.

Notes

  • Pat potatoes very dry after vinegar soak for maximum crispiness.
  • Use flaky sea salt for best texture.
  • Perfect hot or room temperature.
  • Great with ketchup, aioli, or malt vinegar dip.
