Salted Sage Honey Butter Brioche Rolls Recipe

Soft, fluffy brioche rolls brushed with warm salted sage honey butter. These aromatic, lightly sweet rolls are perfect for holidays, cozy dinners, or an elevated bread basket.

  • Brioche Rolls:
  • 3 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 tsp active dry yeast
  • 1 tsp salt
  • 1/2 cup warm milk
  • 3 large eggs, room temperature
  • 1/2 cup unsalted butter, softened
  • Salted Sage Honey Butter:
  • 1/2 cup unsalted butter, softened
  • 2 tbsp honey
  • 1 tbsp fresh sage, finely chopped
  • 1/4 tsp flaky sea salt (or to taste)

Instructions

  • 1. In a bowl, mix warm milk, yeast, and 1 tbsp sugar. Let sit 5–10 minutes until foamy.
  • 2. Add remaining sugar, eggs, flour, and salt. Mix until a dough forms.
  • 3. Knead in softened butter gradually until dough is smooth and elastic (8–10 minutes).
  • 4. Place dough in a greased bowl, cover, and let rise 1–1.5 hours until doubled.
  • 5. Punch down dough and divide into 12 equal pieces. Shape into rolls.
  • 6. Place rolls in a greased baking dish, cover, and rise 30–45 minutes.
  • 7. Preheat oven to 350°F (175°C).
  • 8. Bake rolls 18–22 minutes until golden brown.
  • 9. While baking, mix butter, honey, sage, and sea salt.
  • 10. Brush warm rolls generously with sage honey butter before serving.

Notes

  • Use fresh sage for best flavor.
  • Brush with extra butter right before serving for shine.
  • Rolls can be made ahead and reheated gently.
