Vegetable and Cheese Brunch Bake

A delightful brunch dish combining vegetables and cheese, perfect for gatherings.

Ingredients

  • 3 cups of flour
  • 1 tablespoon of sugar
  • 1 teaspoon of salt
  • 1 tablespoon of baking powder
  • 1 cup of milk
  • 2 eggs
  • 1/2 cup of melted butter
  • 1 cup of diced vegetables (bell peppers, onions, etc.)
  • 1 cup of grated cheese (cheddar or your choice)
  • 1/2 teaspoon of black pepper
  • Fresh herbs (optional for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the flour, sugar, salt, and baking powder in a large bowl.
  3. Beat the eggs and add the milk and melted butter in a separate bowl.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Fold in the diced vegetables and grated cheese.
  6. Lightly grease a baking dish or muffin tin and pour the batter into it.
  7. Bake for 20-25 minutes, or 15-20 minutes if using a muffin tin.
  8. Let the dish cool before slicing and serving.

Notes

For extra flavor, drizzle with honey or maple syrup. Store leftovers in an airtight container for 3-4 days.
