A quick and satisfying one-pan dish combining savory sausage with colorful vegetables, perfect for weeknight dinners.

  • 1 bell pepper (any color), sliced
  • 1 zucchini, sliced
  • 1 cup corn (fresh or frozen)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: chopped fresh herbs (like parsley or basil)

Instructions

  1. Heat the oil: In a large skillet, start by heating the olive oil over medium heat.
  2. Cook the sausage: Once the oil is hot, add the sausage to the skillet and break it into smaller pieces while cooking for about 5 to 7 minutes.
  3. Add the veggies: After the sausage is browned, add the sliced bell pepper and zucchini, and cook for about 3 to 5 minutes.
  4. Stir in the corn: Add the corn to the skillet and cook for another 2-3 minutes until heated through.
  5. Season the dish: Add salt, pepper, and fresh herbs to taste.
