Savory Breakfast Crepes are a delightful way to kickstart your day, filled with scrambled eggs, cheese, spinach, and tomatoes.

  • 1 cup All-Purpose Flour
  • 1 1/2 cups Milk
  • 2 Large Eggs
  • 2 tablespoons Butter (melted)
  • 1/4 teaspoon Salt
  • Cooking Spray or Butter (for greasing)
  • 1 cup Cheddar Cheese (shredded)
  • 1 cup Spinach (fresh or sautéed)
  • 4 Eggs (scrambled)
  • 1/2 cup Tomatoes (diced)
  • 2 tablespoons Chives (chopped)

Instructions

  1. Prepare the batter by warming your non-stick skillet over medium heat.
  2. Mix the flour, milk, eggs, melted butter, and salt until smooth and let rest for 30 minutes.
  3. Grease the skillet lightly with butter or cooking spray.
  4. Cook about 1/4 cup of batter in the pan, spreading it into a thin layer, for 1–2 minutes until golden, then flip and cook for another minute.
  5. Repeat the process with the remaining batter, stacking the cooked crepes.
  6. Prepare the filling by scrambling the eggs and mixing in the spinach.
  7. Assemble each crepe with the egg and spinach mixture, topped with cheese and tomatoes.
  8. Fold or roll the crepes to enclose the filling.
  9. Garnish with chives and serve warm, optionally with sour cream or hot sauce.

Notes

Experiment with different fillings like mushrooms or bell peppers for a unique twist.
