Scrambled Eggs with Smoked Trout and Crème Fraîche

  • 6 large eggs
  • 2 tbsp milk or cream
  • 2 tbsp butter
  • 3 oz smoked trout, flaked
  • 1 tbsp chopped fresh chives
  • Salt and black pepper to taste
  • Lemon wedges, for serving
  • Optional: toasted sourdough or bagels for serving

Instructions

  • 1. Crack eggs into a bowl, add milk, and whisk until smooth and slightly frothy.
  • 2. Melt butter in a nonstick skillet over medium-low heat.
  • 3. Pour in eggs and cook slowly, stirring gently with a spatula until soft curds begin to form.
  • 4. When eggs are just set but still creamy, remove from heat.
  • 5. Gently fold in flaked smoked trout and season with salt and pepper.
  • 6. Top with chives and serve immediately with lemon wedges and toast.

Notes

  • For extra richness, add a spoonful of crème fraîche or cream cheese just before removing the eggs from heat.
  • Substitute smoked salmon if trout isn’t available.
  • Cook eggs low and slow for the creamiest texture.
