- 2 tbsp milk or cream
- 2 tbsp butter
- 3 oz smoked trout, flaked
- 1 tbsp chopped fresh chives
- Salt and black pepper to taste
- Lemon wedges, for serving

- 1. Crack eggs into a bowl, add milk, and whisk until smooth and slightly frothy.
- 2. Melt butter in a nonstick skillet over medium-low heat.
- 3. Pour in eggs and cook slowly, stirring gently with a spatula until soft curds begin to form.
- 4. When eggs are just set but still creamy, remove from heat.
- 5. Gently fold in flaked smoked trout and season with salt and pepper.
- 6. Top with chives and serve immediately with lemon wedges and toast.
Notes
- For extra richness, add a spoonful of crème fraîche or cream cheese just before removing the eggs from heat.
