Sheet Pan Chicken Fajitas: Best 30-Minute Weeknight Dinner

Easy sheet pan chicken fajitas made with juicy seasoned chicken, colorful bell peppers, and onions all roasted together for a quick, healthy, and flavor-packed dinner.

Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts, sliced
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1 lime
  • Fresh cilantro for garnish
  • Warm tortillas for serving

Instructions

  • 1. Preheat oven to 400°F (205°C) and line a sheet pan with parchment paper.
  • 2. Add sliced chicken, bell peppers, and onion to the sheet pan.
  • 3. Drizzle with olive oil and sprinkle with chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
  • 4. Toss everything together until evenly coated.
  • 5. Spread mixture out in an even layer.
  • 6. Bake for 20–25 minutes, stirring halfway through, until chicken is cooked through and vegetables are tender.
  • 7. Remove from oven and squeeze lime juice over the top.
  • 8. Garnish with fresh cilantro and serve with warm tortillas.
