  • 4 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes
  • 1/2 red onion, sliced
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled feta cheese
  • Fresh parsley and lemon wedges for serving

Instructions

  • 1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
  • 2. Place chicken breasts on the sheet pan.
  • 3. Arrange zucchini, cherry tomatoes, and red onion around the chicken.
  • 4. In a small bowl, mix olive oil, garlic, oregano, basil, paprika, salt, and pepper.
  • 5. Brush mixture evenly over chicken and vegetables.
  • 6. Bake for 22–25 minutes until chicken is cooked through and vegetables are tender.
  • 7. Sprinkle feta cheese over the top.
  • 8. Garnish with fresh parsley and serve with lemon wedges.
