Slow Cooker Beef Ramen Noodles Recipe

Tender beef simmered to perfection with savory broth and fresh vegetables, served over chewy ramen noodles. A comforting slow cooker meal that’s perfect any day of the week.

  • 1 lb beef chuck, thinly sliced
  • 4 cups beef broth
  • 2 cups water
  • 3 tbsp soy sauce
  • 2 tbsp miso paste
  • 1 tbsp sesame oil
  • 2 garlic cloves, minced
  • 1 tsp ginger, grated
  • 2 packs ramen noodles (discard seasoning)
  • 2 cups baby spinach
  • 1 cup sliced mushrooms
  • 2 green onions, sliced
  • Soft-boiled eggs for garnish (optional)
  • Sesame seeds for garnish

Instructions

  • 1. Place beef, beef broth, water, soy sauce, miso paste, sesame oil, garlic, and ginger into the slow cooker.
  • 2. Cook on low for 6–7 hours or high for 3–4 hours until beef is tender.
  • 3. About 15 minutes before serving, add mushrooms and spinach.
  • 4. Cook ramen noodles according to package instructions separately.
  • 5. Divide noodles into bowls and ladle slow cooker beef and broth over them.
  • 6. Top with green onions, soft-boiled eggs, and sesame seeds before serving.

Notes

  • Use thinly sliced beef for faster cooking.
  • Add bok choy or carrots for more veggies.
  • Adjust miso and soy sauce to taste for a richer broth.
