Slow Cooker Beef Ramen Noodles Recipe

- 1 lb beef chuck, thinly sliced
- 4 cups beef broth
- 2 cups water
- 3 tbsp soy sauce
- 2 tbsp miso paste
- 1 tbsp sesame oil
- 2 garlic cloves, minced
- 1 tsp ginger, grated
- 2 packs ramen noodles (discard seasoning)
- 2 cups baby spinach
- 1 cup sliced mushrooms
- 2 green onions, sliced
- Soft-boiled eggs for garnish (optional)
- Sesame seeds for garnish
- 1. Place beef, beef broth, water, soy sauce, miso paste, sesame oil, garlic, and ginger into the slow cooker.
- 2. Cook on low for 6–7 hours or high for 3–4 hours until beef is tender.
- 3. About 15 minutes before serving, add mushrooms and spinach.
- 4. Cook ramen noodles according to package instructions separately.
- 5. Divide noodles into bowls and ladle slow cooker beef and broth over them.
- 6. Top with green onions, soft-boiled eggs, and sesame seeds before serving.
Notes
- Use thinly sliced beef for faster cooking.
- Add bok choy or carrots for more veggies.
- Adjust miso and soy sauce to taste for a richer broth.
