Creamy Smothered Chicken and Rice

- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 onion, sliced
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 2 tablespoons butter
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons cornstarch + 2 tbsp water
- 2 cups cooked rice for serving
- Fresh parsley for garnish
- 1. Season chicken with garlic powder, paprika, salt, and pepper.
- 2. Heat olive oil in large skillet over medium-high heat. Sear chicken 4-5 minutes per side until golden. Remove to plate.
- 3. In same skillet, melt butter. Sauté onions, mushrooms, and garlic until softened.
- 4. Stir in chicken broth, scraping up browned bits. Simmer 5 minutes.
- 5. Whisk in heavy cream and Parmesan. Add cornstarch slurry and cook until thickened.
- 6. Return chicken to skillet, spoon sauce over top. Cover and simmer 10-15 minutes until chicken is cooked through (165°F).
- 7. Serve over cooked rice, spooning extra sauce on top. Garnish with parsley.

- Use chicken thighs for extra juiciness.
