Creamy Smothered Chicken and Rice

Juicy chicken breasts smothered in creamy mushroom gravy served over fluffy rice. Comforting one-pan dinner with tender chicken, savory mushrooms, and rich garlic cream sauce.

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 onion, sliced
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons cornstarch + 2 tbsp water
  • 2 cups cooked rice for serving
  • Fresh parsley for garnish

Instructions

  • 1. Season chicken with garlic powder, paprika, salt, and pepper.
  • 2. Heat olive oil in large skillet over medium-high heat. Sear chicken 4-5 minutes per side until golden. Remove to plate.
  • 3. In same skillet, melt butter. Sauté onions, mushrooms, and garlic until softened.
  • 4. Stir in chicken broth, scraping up browned bits. Simmer 5 minutes.
  • 5. Whisk in heavy cream and Parmesan. Add cornstarch slurry and cook until thickened.
  • 6. Return chicken to skillet, spoon sauce over top. Cover and simmer 10-15 minutes until chicken is cooked through (165°F).
  • 7. Serve over cooked rice, spooning extra sauce on top. Garnish with parsley.

Notes

  • Use chicken thighs for extra juiciness.
  • Substitute half & half for lighter version.
  • Perfect with egg noodles or mashed potatoes.
  • Make ahead and reheat gently.
