Soft-Baked Apple Cinnamon Rolls

Deliciously soft and fluffy apple cinnamon rolls topped with cream cheese frosting, perfect for breakfast or dessert.

  • 250g whole milk, lukewarm
  • 50g granulated sugar
  • 2 1/4 tsp active dried yeast
  • 2 large eggs, at room temperature
  • 1/2 tsp kosher salt
  • 565g all-purpose flour
  • 100g unsalted butter, at room temperature
  • 850g apples, peeled, cored, and diced small
  • 30g unsalted butter
  • 80g granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1 Tbsp corn starch
  • 125g pecan halves
  • 190g unsalted butter, at room temperature
  • 280g brown sugar
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 115g unsalted butter, at room temperature
  • 225g cream cheese, at room temperature
  • 250g powdered sugar, sifted
  • 12 Tbsp heavy whipping cream
  • 1/2 tsp kosher salt

Instructions

  1. Prepare ingredients by ensuring they are at room temperature.
  2. Activate yeast by mixing lukewarm milk, sugar, and yeast and letting it sit until frothy.
  3. Mix dough with eggs, salt, and the yeast mixture, then gradually add flour.
  4. Knead the dough for 8-10 minutes until smooth and elastic.
  5. Add butter in increments while kneading until incorporated.
  6. First rise the dough in a greased bowl covered for 1-1.5 hours until doubled in size.
  7. Prepare apple filling by cooking apples with butter, sugar, cinnamon, salt, and corn starch for 5-7 minutes.
  8. Toast pecans in a preheated oven at 175°C (350°F) for 5-10 minutes.
  9. Mix brown sugar, cinnamon, and salt for filling.
  10. Roll out the dough, spread butter, and layer with brown sugar filling, apple filling, and chopped pecans.
  11. Roll tightly and slice into 12-15 rolls.
  12. Prepare rolls in a greased baking dish and let rise for another 30-45 minutes.
  13. Preheat the oven to 190°C (375°F).
  14. Bake for 25-30 minutes until golden brown.
  15. Make frosting by mixing cream cheese, butter, and powdered sugar, adding cream for consistency.
  16. Serve warm with frosting drizzled on top.

Notes

Best served warm with cream cheese frosting. Can be customized with different fruits.
