Soft and Chewy Banana Chocolate Chip Cookies

Delicious, soft, and chewy cookies made from overripe bananas and rich chocolate chips.

Ingredients

  • 1 small overripe banana, mashed (1/4 cup)
  • 1/2 cup vegetable oil or melted butter
  • 1 cup light brown sugar, packed
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup chocolate chips

Instructions

  1. In a large bowl, combine the melted butter (or oil), brown sugar, and mashed banana. Mix to combine well.
  2. Add the egg yolk and vanilla extract. Mix until thoroughly combined.
  3. Add the flour, baking soda, salt, and cinnamon. Stir until there are no streaks of flour.
  4. Fold in the chocolate chips gently. Cover the dough and set aside for about 15 minutes.
  5. Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  6. Using a cookie scoop or spoon, scoop about 1-inch balls of dough and place them about 2 inches apart on the cookie sheet.
  7. Bake the cookies for 10 to 11 minutes, until the edges are set and the centers are still underbaked.
  8. Let them cool before enjoying!

Notes

Store in an airtight container at room temperature. They can also be frozen with parchment paper between layers.
